Pick a lot, ask both questions, and time it. Run it in front of your auditor and traceability stops being a promise and becomes evidence.

A batch that is held cannot be picked, sold or transferred. The rule is in the database, so it holds whichever screen somebody tries.

Traceability here is the shape of the data, not a report somebody maintains. It is still true in year five with nobody minding it, which is the only kind that matters.
- Stock with no lot number is listed, because it cannot be traced later.
- Cold chain logs attach to the batch, so record and goods never travel separately.
- Every movement that put stock somewhere has something taking it off somewhere else.
A recall is a movement like any other. Nothing is deleted, so the history still shows what happened and when.

How far back does it go?
As far as the records do. Every movement is kept, so the walk is limited by when you started rather than by a retention window.
Does it cover things we made, not just bought?
Yes — that is the harder half. A production run links the input lots to the output lot, so the walk crosses the kitchen rather than stopping at it.
What about items with no lot number?
They are listed as untraceable stock, with a value, because that figure is the real size of the gap in a recall.
